Oktoberfest or Wiesn, as the Bavarians call it, doesn’t just belong to Munich. You can bring the festival to your own backyard. This year, we wanted to put a spin on the classic bratwurst and give it an American twist. Juicy bratwurst hot dogs topped with melty Butterkäse cheese, braised red cabbage and apple (Rotkohl), and finished with a tangy German-style mustard sauce. And of course, all of it was cooked on the Weber.
There’s something about cooking brats over charcoal or gas that locks in the smoky flavor. For this cook, we used the Weber Genesis BBQ because it gives that perfect heat control, but honestly, a Weber Kettle with a Charcoal Basket would also nail it.
Ingredients

Bratwurst sausages

Soft hot dog buns

Butterkäse cheese slices - you can pick this up from Aldi, Swiss works well too

Half a red cabbage

One large apple (Granny Smith or Pink Lady)

Seeded mustard (Grober Senf / German-style)

Sour cream

Apple cider vinegar

Sugar - just a pinch to bring out the sweetness of the apple
Method
Fire up your Weber. Thinly slice the cabbage and apple. Toss everything in a little oil before throwing on a skillet. Add a dash of apple cider vinegar and a pinch of sugar until it turns jammy and sweet.
Once you're done with your Rotkohl. Make sure your Weber is a medium-high heat. Place the brats directly on the grill, and cook until browned and juicy.
Tip: Use the Weber Tongs to turn the brats without piercing them, so they stay juicy. Check doneness with the Weber Instant-Read Thermometer — brats are perfect at about 71°C inside.
Just before the brats are done, lay a slice of Butterkäse on top of each one and close the lid for a minute.
Now for the sauce. Whisk together the mustard and sour cream. It’s simple, sharp, and the perfect drizzle to cut through the richness of the brat and cheese.
Tip: If you’ve got the Weber Drip Pans, you can prep sauces or warm condiments right alongside your grill session without extra cleanup.
Finally, nestle the cheesy brat into a soft bun, spoon over some Rotkohl, and finish with a generous drizzle of mustard sauce. Pair it with a cold stein of beer (even better if you managed to score a Yeti Rambler in Black Forest Green), and you’ve got yourself an Oktoberfest feast without the plane ticket to Munich.
